Master chef Nobuyuki “Nobu” Matsuhisa, chef/owner of 14 restaurants worldwide, is bringing his legendary cuisine to Crystal Serenity, the newest ship in the Crystal Cruises fleet. Beginning with the luxury liner’s July 2003 Inaugural cruise, “The Sushi Bar”, one of the ship's new specialty restaurants, will exclusively feature Nobu's menu selections prepared by a Nobu-trained chef ...... here is one of his recipes.

Sashimi Salad with Matsuhisa Dressing

serves 4

sea salt
freshly ground black pepper
7 ounces fresh tuna fillet
5 tablespoons plus 1 teaspoon Matsuhisa Dressing (see recipe below)
2 ounces assorted young micro salad greens or sprouts

Preheat a grill or broiler. Sprinkle a little sea salt and black pepper on
the tuna. Briefly sear the tuna until its surface turns white. Plunge the
fillet into iced water to stop it from cooking any further, then shake off
excess water.

With a sharp knife, cut the tuna into slices 1/8 inch thick (you should have
10-12 slices when you are finished.)

Pour Matsuhisa Dressing onto serving dish.

Roll each slice of tuna into a cylinder and arrange them flower-like around
the edge of the sauce.

Arrange salad greens in a small pile at the center of the plate.

Top with garnishes and serve.

*A note on garnishes: Chef Nobu likes to top this dish with unusual udo
curls and red shiso leaves. Carrot curls can take the place of udo, and can
be made by shaving thin slices of carrot, wrapping the slices around a 1/2
inch diameter rod and placing in cold water until ready to use. If shiso
leaves are unavailable, a sprig of cilantro, Italian parsley or basil will
work instead.

Matsuhisa Dressing
Chef Nobu recommends using Maui onions to maximize sweetness. He also
stresses that this all-purpose dressing works well with meat, on chilled
tofu, or over salad.

3/4 cup finely chopped onion
2 tablespoons plus 2 teaspoons soy sauce
2 tablespoons plus 1 teaspoon rice wine vinegar
2 teaspoons water
1/2 teaspoon granulated sugar
a pinch sea salt
1/4 teaspoon powdered mustard
a pinch freshly ground black pepper
4 teaspoons grapeseed oil
4 teaspoons sesame oil

Combine all ingredients except the oils. When the salt is fully dissolved,
add oils.
